Red, White, & Blue Strawberry Cheesecake Bites

  • 10 large strawberries
  • 40 blueberries
  • 4 oz. cream cheese, softened
  • 1/4 c. confectioner’s sugar
  • 1/8 to 1/4 tsp. almond extract

  1. Place softened cream cheese, confectioner’s sugar, and almond extract in a small bowl; stir until well combined and smooth. Chill for about 10 to 15 minutes.
  2. While cream cheese mixture chills, rinse strawberries and pat dry with paper towels. Leaving leaves on, slice each strawberry in half lengthwise and set aside on a plate or serving platter with the cut side up. {If strawberry halves do not sit level on the platter, cut a very tiny slice from the rounded side of the berry half to create a flat spot for it to sit upon.}
  3. Spoon cream cheese mixture into a piping bag fitted with a large star tip. {If you don’t have a piping bag, you can use a zip-top baggie. Cut off one of the bottom corners of the bag and use it to pipe through.} Pipe cream cheese mixture onto each of the strawberry halves.
  4. Top each strawberry half with two blueberries. Serve immediately or refrigerate for up to about 3 hours.

Red,White, and Blue Deviled Eggs

  • 1 dozen hard boiled eggs
  • ¼ cup non fat plain yogurt (or desired amount)
  • 1 tablespoon mayonaise ( I prefer Hellman’s/ Best Foods)
  • ½ teaspoon dry mustard
  • salt & pepper
  • Americolor Food coloring (red and blue)

  • Piping bag

  1. Cut eggs in half and take out yolks and place them in a medium bowl.
  2. Use a pastry cutter or fork to break up yolk until it’s super fine.
  3. Add yogurt, mayo, mustard, s&p and whip up with spatula until smooth and creamy.
  4. Place mixture into piping bag fitted with a 2D tip.
  5. Mix 1 cup hot water and 1 teaspoon Americolor food coloring and 1 teaspoon vinegar. The vinegar helps the color stay bright, I tried it both ways and the eggs with vinegar have a brighter color.
  6. Place egg whites into the colored water and let sit until desired color is achieved about 1-2 minutes.
  7. Take out egg whites and place on paper towel to allow excess color to drip off.
  8. Then arrange eggs on platter.
  9. Pipe the egg yolk mixture into the egg white halves.

Caprese Salad Skewers

  • Cherry tomatoes
  • Mozzarella balls
  • Fresh Basil
  • Olive Oil
  • 1 cup balsamic vinegar
  • salt and pepper

  • Medium-sized toothpicks

  1. Assemble, tomatoes, basil (roll from one end to the other), and mozzarella balls on medium-sized toothpicks. Drizzle with olive oil and sprinkle with salt and pepper.
  2. To make balsamic glaze, add one cup of balsamic vinegar to a sauce pan over medium heat. Once it comes to a boil, set on simmer for about 10-15 minutes until it reduces to a syrup consistency. You can check by dipping a spoon in the balsamic and if it covers the back of it, it’s done. As it cools, it will thicken a bit more then drizzle on top of caprese salad skewers.

YUM! Whether you’re throwing the party or you’re the life of party, you’ll always look fabulous in our 4th of July gear!
